Banana Chocolate Swirl Cupcakes

Your Cup of Cake













The Story:
I needed to make something banana, due to the fact that I
 had 2 very brown bananas on my counter. But I didn’t
know if I should top them with cream cheese frosting or
chocolate. Cream cheese is basic and simple and chocolate
frosting on a banana cake doesn’t always photograph well
for me. So I decided to do both!

Banana Chocolate Swirl Cupcakes
Yield: 24 Cupcakes
Ingredients
Banana Cake:
1 box Yellow or White Cake Mix
2 teaspoons cinnamon
2 ripe bananas, mashed
1 teaspoon baking soda
1 teaspoon lemon juice
1/3 cup oil
3 eggs
3/4 cup buttermilk
1/2 cup sour cream
2 teaspoons vanilla extract
Cream Cheese Frosting:
8 oz cream cheese, softened
1/4 cup butter, softened
2 teaspoons vanilla extract
3-4 cups powdered sugar
Chocolate Buttercream:
3/4 cup butter, softened
2 teaspoons vanilla extract
1/3 cup unsweetened cocoa powder
3-4 cups powdered sugar

Directions

1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. Sift cake mix and cinnamon into a small bowl and set aside.
3. In a separate small bowl, finely mash bananas using an fork.
Add baking soda and lemon juice, stir, and set aside.
4. In a large bowl, gently whisk oil, eggs, buttermilk, sour cream
and vanilla extract together.
5. Add bananas to the wet ingredients and stir.
6. Add cake mix and stir until smooth.
7. Fill cupcake liners 3/4 full and bake for 15-22 minutes, or
until and inserted knife comes out clean.
8. Chocolate Swirl Frosting: Cream Cheese Frosting: Beat
cream cheese and butter for 2 minutes. Scrape down bowl
and add vanilla extract. Slowly add powdered sugar until
you reach your desired consistency. Remove from mixing
bowl and place in a small bowl. No need to wash your mixing
bowl, the chocolate buttercream will mix right in!
9. Chocolate Buttercream: Beat butter for 2 minutes. Add
vanilla extract and cocoa powder. Slowly add powdered
sugar until you reach your desired consistency.
10. To swirl the frosting, you will need 3 piping bags. Bag #1,
 fill with some of your cream cheese frosting (do not put in too much).
 Bag #2, fill with some of your chocolate buttercream (again, not too much).
Bag 3, fill with your desired piping tip, then fit Bags 1 & 2 into it. This
will take a little finessing, but you can do it! (See photo)
11. Pipe onto cooled cupcake and top with sanding sugar and fresh banana slices.

Easy Banana Cupcakes

Thank You Lizzy you did it again.


The Story:
One of my very first posts was this recipe for simple banana cupcakes. But I ended up taking in down a few months ago because the photos were just SO horrendous. But then I start getting nervous emails from people because they couldn’t find the recipe anymore! So here is the recipe, but with photos to redeem myself :)
Easy Banana Cupcakes
Yield: 24 Cupcakes
Ingredients

Banana Cake:
1 box Yellow Cake Mix
1/2 cup flour
3 ripe bananas, medium-small sized
1 teaspoon baking soda
1/2 teaspoon lemon juice
3 eggs
1/3 cup oil
3/4 cup buttermilk
3/4 cup sour cream
1 tablespoon vanilla extract
Cream Cheese Frosting:
1/2 cup butter, softened
8 oz cream cheese, softened
2 teaspoons vanilla extract
3-4 cups powdered sugar
Chocolate Ganache:
1/2 cup chocolate chips
1/2 cup heavy cream
1 1/2 tablespoons honey

Directions

1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. In a small bowl, sift cake mix and flour together.
3. In another small bowl, finely mash bananas with baking soda and lemon juice.
4. In a large bowl, gently whisk eggs, oil, buttermilk, sour cream and vanilla extract.
5. Add mashed bananas to the wet ingredients and stir. Add cake mix/flour and stir again.
6. Fill liners 3/4 full and bake for 15-18 minutes or until an inserted knife comes out clean.
7. Frosting: Beat butter and cream cheese for 3 minutes. Add vanilla extract and slowly add powdered sugar until you reach your desired consistency. Add milk to thin out frosting if needed.
8. Ganache: Place chocolate chips in a heat proof bowl. Heat heavy cream on the stove top until bubbles form (not quite a boil). Pour over chocolate chips and whisk until smooth. Add honey and stir again. Let cool for 10 minutes.
9. Pipe buttercream onto cooled cupcakes and top with chocolate ganache and banana slices.


Use Chocolate Jimmies if you don’t want to make ganache!

Beautiful pictures for my Screen Saver

I had a friends share some pictures with me today and I want to share some with you they are by Greg Olsen.  I love his paintings and now I some for my screen saver so share evey day with me.  So now you will get to see only five of them but I can share more if you would love to see some of them.

I'll use it for a while then change it to another one of his pictures
Then after I use them all I will go back to my two grandchildren from California.
