Last One for 2011, Happy New Year !

First I hope everyone will has a safe fun night tonight and i know most of you won't get this one until in the morning so again I hope you New Year was great.  Welcome to 2012.  I have been busy making cards today and this is the last post for my 2011 year I really hope you all will like these also.





Thank you all for coming by and I want to let each of you know What this year has done for me.  I take care of my husband who is classed as terminally ill and this place has taken me away from all my worries and has given me a new meaning. I want to thank each and everyone of you for this great place. Thank you Melissa for inviting me and opening this whole new world to me. Thank you to all the New Friends I have made thru here and for that I'm very grateful for.

This almost makes it!

I think I will meet my goal of making my post for the year. I still have one more after this and then I'm done for the rest of this year. Ha Ha Ha.  Trying to be funny. I have been working on trying to get the last of my cards done for the week-end cause we will have family in on Monday for a few hours so I have to get things ready for them. You will see in these cards how Crazy I am about my Purple Cows stuff.  I love them so much that I had to order more supplies of them.  That makes me one very happy camper.  Thank You again Hive.

We are having fun are YOU!

I wanted to share with you what two of our grandchildren love to do........  Last month while we went down to the wedding this is one thing the four grandkids got to do.  This is two of our oldest ones that was with us at that time.  They had so much fun that I just wanted to share with you what they was doing and you can see the joy in their faces....  It looks like pure joy on those faces and they would do this for hours if we would let them.  But as usually we had things to do and places to go.  Here is what I want to share. 

Here the two girls jumped at the same time. They was each taking turns and having a ball doing it.  They wanted to see who made the biggest splash.

Just having a lot of fun and waiting for Uncle Doran to say I Do. So in the mean time these girls are having a lot of fun.

See what we are getting Monday.

My husband I didn't have any Christmas this year cause our son got married and we put all of our money toward that. So we had to wait until January to get our gift.  Most of you know my husband is in very poor health and his heart is very bad.  He also don't like me to be in another room working on my computer or doing my scrapbooking or making cards.  So most of my stuff is out in the living room.  So I have my stuff in these clear plaste three drawer things that you can buy at Wal-Mart.  They are really old and are falling apart.  I don't even want to take a picture of them to show you cause it is so bad.  So we are getting this Bookcase from Ikea.  Here let me show you:

This is the bookcase.  But it is standing up and that won't work for me.  So we are laying it down like this.

We have a spot under our living room window that this will set and I'm putting all of my stuff into these clear drawer that will go into each square.  I'm going to put a colored paper ove the front of each drawer so you can't see what is in ther.  but really it is to cover the mess.

I have the bigger full size bookcase of this in one of our bedrooms and I love it.  It will make my room look so nice and not mess any more.

More & More & More yet to come.

As I work on my cards I think about the ladies who get these and wonder what they are thinking.  I wonder if they like them or not. It would be nice to hear from one of them But that may never come.  I do see and hear from the ones that do come to church.  They are so sweet and kind to me.




Check out the corn on this card.  It was made with the Purple Cow Punch It. in the next month or two I want to buy one more of these.  They have 4 or 5 different kinds and I love this one so I know I will love the other ones also. I also like the Wrap It the thing that make the wire things that are on the cards.

I'm So Excited ! Want to see WHY.

The more I work with this stuff the more I love it.  The Hive is the best place to learn and to have fun.  I just wish more of my family and friends would come and join us.  They are missing so much.  This place has the best ladies and men with the best talents out there.
Here is what I have been doing since yesterday afternoon.  I will have two posting here so i can show all of them.

Hot Chocolate Truffles

Hot Chocolate Truffles



The Story:
Truffles have always scared me. They just seem like something you get during the holidays from fancy stores, not something I could do myself. But I gained some confidence when I went to my boyfriend’s sister’s house and saw her making these sweet things. I thought, “Hm, maybe I can do this.” So here you go.
Just because Christmas is over, it doesn’t mean hot chocolate season is over too! Crush all those extra candy canes and get rolling!





Hot Chocolate Truffles:
2 cups semi-sweet chocolate chips
1 cup heavy cream
1 tablespoon sugar
¼ teaspoon salt
2 teaspoons vanilla extract

yields 15 truffles


Directions:
1. Place all ingredients in a pot and melt together on low heat until smooth. Stir constantly.
2. Let cool in the fridge until stiff enough to scoop.
3. Make small scoops, about 2 Tablespoons each. And place them in the freezer for and hour.
4. Remove scoops, roll into balls.
5. Roll in your choice of decoration. Crushed candy cane, cocoa, cinnamon, mini marshmallows. (If you try the mini marshmallows, you really have to push the marshmallows into the chocolate balls.)
6. Wrap each ball in suran wrap and keep chilled until ready to use.
7. When ready, drop chocolate balls into 1 ½ cups of hot milk and stir!

Almond Poppy Seed Muffins

Your Cup of Cake



The Story:
I cannot tell you how much chocolate, peppermint and eggnog I have had in the last week. I thought it was time to introduce my taste buds to a few other flavors that aren’t so prominent around Christmas time.



Almond Poppy Seed Muffins:
3 eggs
1 ½ cups white sugar
½ cup + 1/8 cup vegetable oil
½ cup applesauce
1 cup milk
1 ½ teaspoons vanilla
1 teaspoon almond extract
3 cups flour
1 ½ teaspoon salt
1 ½ teaspoon baking powder
1 ½ tablespoon poppy seeds

Almond Filling:
¼ cup butter, softened
¾ cup sugar
1/3 cup oats, chopped in blender
2 teaspoon almond extract

sliced raw almonds
turbinado sugar

yields 20 muffins
Directions:
1. Preheat oven to 350 degrees and line or spray muffin pans.
2. Almond Filling: Beat butter, sugar, oats and almond extract until combined.
3. Muffin Batter: In a large bowl with a wooden spoon, gently combine eggs, sugar, oil, applesauce, milk, vanilla and almond extract.
4. In a separate bowl, whisk together flour, salt, baking powder and poppy seeds.
5. Slowly combine dry and wet ingredients using the wooden spoon to mix. Stir only until moistened. There will still be lumps, but stop stirring!
6. Fill pans ¾ full.
7. Form little balls of the almond filling (about the size of 1 teaspoon) and push them into each cup of batter.
8. Top with sliced, raw almonds.
9. Bake for 17-25 minutes, or until an inserted knife comes out clean. Seven minutes into baking, sprinkle tops with turbinado sugar to give them an extra sweet crunch on top.
10. Let cool for 5 minutes in pans and move to cooling racks.
