The Story: Wherever I go, I am “cupcake girl.” So sometimes I show up at a relative’s house and I am informed that I will be making cupcakes for a family affair. Do I have any tips, any scoops, even any cupcake pans? Nope. But I miraculously seem to make it work. 3 eggs ½ cup oil ¾ cup buttermilk 1 cup sour cream1 teaspoon vanilla extract Devil’s Food Cake mix Cream Filling: 8 oz cream cheese ¼ cup butter, softened 1 teaspoon vanilla extract Chocolate Ganche: ½ cup chocolate chips 2 T heavy cream Melted White Chocolate for decoration Directions: 1. Preheat oven to 350 degrees and line pans with 20 cupcake liners. 2. In a large bowl, mix eggs, oil, buttermilk, sour cream and vanilla extract. 3. Mix in (or sift in for easy mixing) cake mix and stir well. 4. Fill cupcake liners ¾ full and bake for 16-20 minutes, or until an inserted knife comes out clean. 5. Cream Filling: Beat all ingredients for 5 minutes until light and fluffy. Fill a piping bag with cream filling. 6. When cupcakes are cooled, use a small knife to cut a cone shaped piece out of the top of each cupcake. Cut the point part off of each “cone” so that you can use the top as a “lid.” 7. Fill the cupcake with filling and place the “lid” on top. 8. Ganache: Using a double boiler or the microwave, heat cream and chocolate chips and stir until smooth. Let cool for a few minutes, then spoon over cupcakes and spread evenly over cakes. Let set for 10 minutes. 9. Melt white chocolate (be careful, white chocolate burns easily) and drizzle over cakes. Happy Thanksgiving.
I'm going down memory lane this morning and I was remembering when I was a little girl to my first holidays. I'm not sure if this is Thanksgiving or Christmas but that is okay cause it is still a good time of the year for me.
This is me standing behind my mother, who was pg with the youngest at that time or at least for the next thirteen years. This is the first Holiday I remember and can remember having fun with my uncle who is the little boy in the back ground. Skippy is 6 months younger then I am. So we grew up playing together.

Family Album
Now that the wedding is over and I have a day of rest. I put together this album. I love it but I'm not real sure if the bride will but I only ordered one. I know that I will I would be happy to make another if someone wants to pay for all the pictures and some of the paper for me. Well this is what I did up, two of them and I will tell you at the end which one I ordered.
I love them both and so does my husband but the one I ordered was the purple one cause it can from the same set that their first album is coming from. I love purple and so does she. Now both of my daughters love purple.
Thanks for coming by and I hope you like it and I hope she will too. I want to say Thank you to Creative Memories for making these kinds of albums. When I'm done I will have a album she will be proud to have and so will I.

The De Graw Family
Hi ladies it is finally over and I'm glad. I want to start by thanking my new Daughter in Law's parents for the wonderful job they all did on the wedding. I know I was very please with it and very very happy and glad to meet Cheryl and Rick and the sisters of the Bride, oh the grandfather of the Bride also. Tom I'm so glad to finally meet you. Your granddaughter talks about you a lot and to me that show me how much she loves you. I'm so grateful for our New daughter in law and glad to add her to our family. I have some more pictures to share and can't wait to start their Wedding album with these pictures. I don't have all of the engagement pictures but I do have enough to start anyhow. Thank you Cheryl and Rick for the pictures, thanks to the sisters that took the pictures also they all was good.

Mr. & Mrs. Doran De Graw Jr.
Well it is partly over and just one more night of it. What a wonderful wedding it was but a beautiful family Doran has married into. He is loved by them all. We was so grateful when we saw our Bishop and his wife. What wonderful people they are. Celina and her mother and sisters did a wonderful job of pulling this all together. The tables and everything was so beautiful. We are truely blessed to have Celina a part of our family. Yes there was a lot of tears of JOY for them. I want to share some pictures of last night but not all that I have just a few.

Chocolate Coconut Cupcakes
The Story: This could very well be my all-time favorite cupcake. They are not the prettiest things, but wow, they are amazing. Coconut cupcakes are always fabulous, but they need a little chocolate to amp up the coconut flavor and really make it pop. I usually only eat a half of a cupcake when I bake. But I ate about 6 of these…. Whoops. It’s a good thing I am hiking the Grand Canyon on Saturday. Coconut Cupcakes: 1 cup butter, softened 2 cups sugar 9 egg whites 4 cup flour 2 teaspoons baking powder ½ teaspoon baking soda ½ teaspoon salt ¼ cup cornstarch 1 can coconut milk (13.5 oz) ½ cup buttermilk 1 ½ teaspoon vanilla 1 ½ teaspoon coconut extract Coconut Buttercream: ¼ cup butter, softened 1 ½ teaspoons coconut extract 3 cups powdered sugar Chocolate Buttercream: ½ cup butter, softened 4 oz cream cheese, softened 1 teaspoon vanilla extract ½ cup unsweetened cocoa 3 cups powdered sugar Shredded Coconut for decorating Directions: 1. Preheat oven to 370 degrees and line pans with cupcake liners. (Yields 30 cupcakes) 2. Beat butter and sugar until light and fluffy, be sure to scrape bowl. 3. Mix in egg whites one at a time on slow until fully incorporated. Be sure to scrape bowl constantly. 4. In a separate bowl, combine flour, baking powder, baking soda, salt and cornstarch. 5. Add half of the flour mixture to the butter mixture. Mix only until combined. 6. Add coconut milk, buttermilk, coconut and vanilla extract. Mix. 7. Add remaining flour mixture. 8. Scrape bowl down, batter should be sort of fluffy. 9. Fill cupcake liners ¾ full and bake for 17-22 minutes, or until an inserted knife comes out clean. 10. Coconut Buttercream: Beat cream cheese and butter until light and fluffy. Add coconut extract and powdered sugar. If too thick, add milk. If too thin, add powdered sugar. 11. Fill a piping bag with the coconut buttercream, then use the same mixing bowl for the chocolate buttercream, no need to clean it! 12. Chocolate Buttercream: Beat butter and cream cheese until light and fluffy. Add vanilla extract, cocoa and powdered sugar. If too thick, add milk. If too thin, add powdered sugar 13. Assemble cupcake by piping onto cooled cupcakes. First top with a layer of chocolate buttercream. Then coconut buttercream. Then roll it in shredded coconut! How perfect is that? Here Comes the Bride & Here Comes the Groom
By this time next week our son will be married and his three children will be calling her mommy. All three of them has said that they want to call her mommy and are really happy about calling her that. Then her daughter will get to call him daddy. She will have a father on hand at all times and she is really happy about that.

I love this picture of the two of them. This one will become a 12 x 12 later on. I want this one to hang on my wall with their Wedding pictures which will be taken on Friday one hour before the wedding.
This is the one the bride liked.
This one they both liked so much that it was put on the announcement and invite that everyone got. The Bride was really happy with this one.
I love how she is looking into his face and with that big beautiful smile that she has. So loving and so tender into each other eyes.

Raspberry Hot Chocolate Cupcakes
I love this ladies cupvakes these awesome to eat. My family loves them and I have cooked most of her cupcakes. I get these from Your Cup of Cake She is a wonderful cook and I love her blog. Here is one from her blog that my family loved.
Chocolate Cake: Devil’s Food Cake Mix 3 eggs ½ cup oil ¾ cup buttermilk 1 cup sour cream 1 teaspoon vanilla ½ teaspoon cinnamon Raspberry Marshmallow Filling: ½ cup marshmallow cream ¼ cup raspberries, strained 1 cup powdered sugar Raspberry Whipped Cream: 1 pint whipped cream 2-3 teaspoons raspberry gelatin 1 cup powdered sugar Directions: 1. Preheat oven to 350 degrees and line pans with cupcake liners (yields 34). 2. In a large bowl, gently combine eggs, oil, buttermilk, sour cream, vanilla and cinnamon. 3. Stir in cake mix (sift in for easy mixing). 4. Fill cupcake liners ¾ full and bake for 17-20 minutes, or until an inserted knife comes out clean. 5. Raspberry Marshmallow Filling: Combine all ingredients. 6. Raspberry Whipped Cream: Beat whipped cream until stiff peaks form. Stir in gelatin and powdered sugar until desired taste is reached. 7. When cupcakes are cooled, cut a cone shaped hole out of the tops and fill with marshmallow filling. 8. Just before serving pipe whipped cream on top and top with mini marshmallows and sprinkles.
